Ginger Lobster

INGREDIENTS
- - 4 lobster tails
- - 1 cup oil
- - 1/4 tsp garlic
- - 1/4 tsp salt
- - 1/4 tsp sugar
- - 2 tbl ginger julienned
- - 1/4 tsp chicken boullion
- - 1 tbls soy sauce
- - 1 tsp oyster sauce
- - 1 tbl water or chicken stock
- - 2 tsp corn starch + 1 tsp corn starch for sauce
INSTRUCTIONS

- Clean and cut lobster tails in half, then into 4-5 pieces.

- Toss lobster in 2 tsp of cornstarch.

- Heat oil in wok on high heat until hot. Once hot, add lobster and cook for 1-2 minutes until partially cooked. Drain.

- In a separate pan, coat the pan with oil and heat on medium high. Once hot, turn down to medium.

- Fry garlic and ginger until golden brown.

- Add oyster sauce, chicken stock, sugar, salt, chicken boullion and lobster. Cover for 1-2 minutes.
- Add white pepper to taste, cilantro, and green onions.
